Pan Roasted Halibut With Shallots and Pecan Sauce

This is a really great recipe. We love nuts and they happen to be really good for you.  But we also dig shallots and use them frequently. This particular recipe works with either halibut steaks or filets.  Take a good look at the picture below.  This is what fresh halibut should look like.  This one came out of the water less than 48 hours of me snapping the picture.  No mean feat to get seafood like this in Colorado.  We walk the extra mile for the coop.

If I am not mistaken this is a recipe from a Ruth Reichl article.  She is a sensational chef and writer.  I highly recommend you google her and check out her books and online persona.  I kind of miss comfort foods like grilled cheese sandwiches but I found this recipe form her that I plan to make over the weekend.  Click on the link I think you will like her enthusiasm.
