Pici all’ Aglione

Aglione Sauce is one of those quick simple sauces that that takes 10-15 minutes to make.  It is essentially the classic red sauce with a lot of garlic.
Ingredient list…  4 oz Extra Virgin Olive Oil…
1-2 Tsp Bomba Pepper Sauce…
4-6 Cloves Garlic Sliced Thinly…
1-2 Jars San Marzano or Piennolo Tomatoes or a jar or a jar or 2 of Passata…
Salt and Black Pepper To Taste
Crush tomatoes by hand or in the case pf the Piennolo tomatoes squeeze them between your fingers till the seeds pop out into a bowl and toss the cleaned Piennolo into another bowl along with the liquid from the jar,When you are done seeding the tomatoes run the bowl with the seeds pulp and juice through a wire mesh into the bowl with the cleaned tomatoes and you are ready to cook,
Get your saute pan warm and add in the oil the garlic and the Bomba Sauce and in 4 or 5 minutes whe the garlic is golden brown and the oil well seasoned add the tomatoes juice and all to the skillet.Then add the tomato, season with salt and pepper, cook on high heat for about 10 minutes, stirring occasionally. Add pasta to coat well.  Serve with grated Pecorino cheese.
