This is another great recipe from Roberto Scala. Saffron has been valued for its culinary and medicinal qualities for something like 3000 years. It its bitter flavor has been described as having a metallic honey and sweet hay like notes. It adds an orange cast to the foods you cook with it. A little goes a long way. Roberto uses it here in one of his signature recipes and it bitter notes contrast the sweet flavors of the onions. Delicious!
