A “soft” pasta of the highest quality made in northern Italy, when cooked this tagliatelle (a larger version of fettucine) has a wonderful velvety quality, much like a dumpling. Use with any sauce.


The Alta Valle Scrivia factory, located in Val di Montoggio, is run by the Miaglia brothers. This factory is known throughout Liguria as one of the few to faithfully reproduce organic, traditional pasta shapes such as trofie, lasagnette, trenette, scuccuzzu, and croxetti. The exquisite flavor and dimpling-like quality of their white pasta reflects the artisanal care that goes into the wheat selection and processing.
